There are coffees that are good. And then there are coffees that make you stop and reconsider what coffee can be.

The Wush Wush is a rare heirloom coffee varietal from Ethiopia's Southern Nations, Nationalities and Peoples region — grown between 1800 and 2150 meters and processed naturally, meaning the whole cherry dries around the bean before milling. That process concentrates the fruit sugars and produces something genuinely unexpected in the cup.

Floral on the nose. Watermelon and Jolly Rancher on the palate — fruity in a way that sounds unlikely until you taste it and realize it's exactly right. The acidity is moderate, the finish is long, and the whole thing holds together in a way that earns its price.

One thing worth knowing: we intentionally rest this coffee for at least two weeks after roasting before shipping it. Most coffee ships same-day roast. This one is different. The Wush Wush varietal opens up with time — the flavors integrate and the fruit notes come into focus. When you get this bag, it's not old coffee. It's ready coffee. That's intentional, and it matters.

 

BREWING NOTE

Natural process coffees reward a slightly coarser grind and lower water temperature (195°F). Give it a longer bloom — 45 seconds — and pour slowly. It's a coffee that benefits from patience.

This is the coffee we make every morning at 1101 Spruce Street. It's the one our baristas pull for espresso, dial in for lattes, and drink themselves on break. When we say it's the house blend, we mean it literally.

We built The House as a medium roast that works across every brewing method — espresso, drip, pour-over, French press, Chemex. Most blends are optimized for one method and tolerate the rest. This one was designed to be genuinely excellent in all of them, which means the roast profile had to be precise enough to hold up to high heat but open enough to shine in lower-extraction methods.

Baker's chocolate and dried cherries carry the flavor, with port wine and a whisper of tobacco that keep it from going sweet. Full body. Smooth finish. No weird aftertaste.

It's the coffee you reach for without thinking — which is the highest compliment we know how to give.

 

BREWING NOTE

Dials in cleanly as a 1:2 espresso ratio (18g in, 36g out, 28–32 seconds). As drip, use a medium grind and a standard 1:15 ratio. It holds its flavor well over a thermal carafe, which means it's a reliable choice for households that brew a full pot.
