The Wush Wush is a rare heirloom coffee varietal from Ethiopia's Southern Nations, Nationalities and Peoples region — grown between 1800 and 2150 meters and processed naturally, meaning the whole cherry dries around the bean before milling. That process concentrates the fruit sugars and produces something genuinely unexpected in the cup.

Floral on the nose. Watermelon and Jolly Rancher on the palate — fruity in a way that sounds unlikely until you taste it and realize it's exactly right. The acidity is moderate, the finish is long, and the whole thing holds together in a way that earns its price.

One thing worth knowing: we intentionally rest this coffee for at least two weeks after roasting before shipping it. Most coffee ships same-day roast. This one is different. The Wush Wush varietal opens up with time — the flavors integrate and the fruit notes come into focus. When you get this bag, it's not old coffee. It's ready coffee. BREWING NOTE

Natural process coffees reward a slightly coarser grind and lower water temperature (195°F). Give it a longer bloom — 45 seconds — and pour slowly. It's a coffee that benefits from patience.
